Cyprus: Eggplant





Chicken & Eggplant

  • 2 tbsp oil                                                       
  • 1 onion, diced
  • 2 cloves garlic
  • Pinch of mixed herbs
  • ¼ cup red wine
  • 6 juicy ripe tomatoes, diced
  • ¼ cup tomato paste
  • ½ cup water
  • Sea salt and pepper
  • Pinch of sugar
  • 8 chicken thighs
  • 8 slices or strips mozzarella cheese
  • 8 long slices char-grilled eggplant

  • Tablespoon
  • Wooden spoon
  • Knife
  • Cutting board
  • Tray
  • Peeler
